When everyone took a bite of this casserole, they couldn’t stop eating it

Polish Pasta Casserole

Ingredients:

12 ounces (about 340g) of pasta (such as penne or fusilli)

1 tablespoon olive oil

1 medium onion, chopped

2 cloves garlic, minced

1 pound (about 450g) of Polish sausage, sliced into rounds

1 can (14.5 ounces) diced tomatoes

1 cup (240ml) sour cream

1 cup (100g) shredded cheddar cheese

Salt and pepper to taste

Chopped fresh parsley for garnish (optional)

Instructions:

Preheat your oven to 375°F (190°C). Grease a 9×13 inch baking dish and set aside.

Cook the pasta according to the package instructions until al dente. Drain and set aside.

In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, and cook until softened, about 3-4 minutes.

Add the sliced Polish sausage to the skillet and cook until lightly browned, about 5 minutes.

Stir in the diced tomatoes (with their juices) and sour cream. Season with salt and pepper to taste. Let the mixture simmer for 5 minutes, stirring occasionally.

Add the cooked pasta to the skillet and toss until well coated in the sauce.

Transfer the pasta mixture to the prepared baking dish. Sprinkle the shredded cheddar cheese evenly over the top.

Cover the baking dish with foil and bake in the preheated oven for 20 minutes.

Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden brown.
